La Cristalinais a 19-hectare farm and has been a family business for over 100 years. The owner of the farm was Guillermo Grajales, who bequeathed the farm to his sons Alberto and Germán after his death in 2015. María Grajales, the fifth generation of coffee farmers on this farm, began introducing various processing techniques starting in 2015, such as the production of natural coffee. The main crop of the Cristalina farm is coffee, predominantly of the Castillo variety. In addition, there are some plantain and orange trees. Since 2019, the cultivation of various cocoa varieties has begun to secure future income in light of the expected climate change.
Röstung
Decaffeinated coffee requires a delicate touch when roasting. We chose a medium roast to ideally utilize its versatility as espresso and filter coffee.
